Vermilion Snapper, commonly called beeliners or mingo, are one of the most reliable and plentiful catches on party boats throughout the South Atlantic and Gulf of America. These beautiful crimson fish school up over structure and provide fast, consistent action.
Party boats target Vermilion Snapper over natural and artificial reefs, ledges, and wrecks in depths of 80 to 300 feet. Small pieces of squid, cut fish, or shrimp on double-hook rigs dropped to the bottom are the standard approach. Vermilions tend to feed a few feet off the bottom, so reeling up slightly after hitting bottom can produce more bites.
The fight is lively but manageable. Vermilion Snapper pull hard in short bursts and can surprise you with their strength, especially when reeling up from deep water. Fish typically run 1 to 3 pounds, with larger fish reaching 5 pounds. Catching a cooler full is common on good trips.
At the table, Vermilion Snapper is outstanding. The flesh is light pink, delicate, and sweet, with a texture similar to Red Snapper. They are perfect for pan-frying whole or filleting for any preparation. Many longtime party boat anglers consider Vermilion Snapper one of the tastiest fish in the ocean.
