Florida Pompano is one of the most highly prized fish in the Southeast, commanding top dollar at fish markets and restaurants. Party boats and drift boats targeting nearshore waters catch these beautiful silver fish, especially in spring and fall.

Party boats find Pompano over sandy bottoms, along beaches, and near inlets in relatively shallow water, typically 10 to 40 feet. Small jigs tipped with shrimp or Fishbites, and live sand fleas or shrimp, are the most productive baits. Pompano often travel in schools along the bottom, following the sand flea beds.

The fight is sporty and fun. Pompano make quick runs and put up a surprising amount of resistance for their size. Their laterally compressed body acts like a flat plate in the current, adding to the challenge. Most fish run 1 to 3 pounds, with larger fish reaching 5 to 6 pounds.

Pompano is considered one of the finest eating fish in American waters. The rich, buttery, white flesh has a distinctive sweet flavor that is unmatched. Pompano en papillote is a legendary New Orleans dish, and simply pan-fried Pompano is one of the great seafood treats. This is a fish worth targeting just for the dinner.
